1 pound green beans, ends trimmed
3 cloves garlic, minced
2 tablespoons olive oil
1/2 cup vegetable broth or water
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried basil or 1 tablespoon freshly chopped basil

In a medium saucepan or dutch oven, heat olive oil on medium-high heat.
Add green beans, garlic and seasonings.
Sauté for approximately 5 minutes.
Make sure garlic does not burn.
Add liquid.
Bring to a boil.
Cover and turn heat down to medium-low.
Cook for 20 minutes, or until green beans are tender.
Adjust the seasonings.

green beans and tomatoes

2 pounds fresh green beans, trimmed
1/4 cup extra-virgin olive oil
1 1/2 cups chopped onions
1 tablespoon minced garlic
28 ounce can diced tomatoes with juice
2 tablespoons fresh oregano, minced, or 1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper

Rinse the green beans in cold water.
Heat oil in a large pot over medium-high heat.
Add onions and garlic, cook until onions are soft.
Add green beans, tomatoes, oregano, salt and pepper.
Bring to a boil.
Reduce heat to simmer, cover pot and cook 1 hour, stirring once or twice.

Cauliflower and Green beans roasted 2

 

 

 

 

2 1/2 pound cauliflower, cut into 2 inch florets
1 1/2 pounds green beans, trimmed
1/2 cup Kalamata olives, pitted
1 head garlic
4 tablespoons olive oil, divided
1/2 cup plain bread crumbs
1 teaspoon Kirkland 21 spice blend, or a brand of your choice
Kosher or sea salt
Freshly ground black pepper

Preheat oven to 450°F.

Line a rimmed baking sheet with parchment paper.
In a large glass mixing bowl, combine cauliflower florets, green beans, garlic head and olives.
Add 2 tablespoons olive oil, salt and pepper to taste.
Toss to combine.
Spread vegetables in a single layer on baking sheet.
In a small bowl, mix remaining 2 tablespoons olive oil with bread crumbs and spice blend.
Sprinkle mixture over vegetables.
Roast for 35 minutes, stirring vegetables once.
Remove from oven.
Let cool.
Separate garlic cloves and peel off skin.
Toss the garlic cloves over vegetables.
Place in a serving dish.
Serve warm.

4 small potatoes
2 small beets
1/2 lb. green beans
3 small dill pickles, diced
1/2 cup vegan mayonnaise
2 tablespoons lemon juice, fresh
2 tablespoons Dijon mustard
1/2 teaspoon salt or to taste
freshly ground pepper to taste
5 tablespoons olive oil, divided

Preheat oven to 400°F.

Wash, peel and dice potatoes into desired size. Toss with 2 tablespoons olive oil and roast in a large pan, fitted with parchment paper for approximately 50 minutes. Peel and dice beets. Toss with 2 tablespoons olive oil, add to the potatoes and roast for 40 minutes. Wash green beans and cut into thirds. Toss with remaining 1 tablespoon olive oil, add to the pan and roast for 15 minutes. Remove from oven and cool.

Dressing

In a large bowl, whisk together mayonnaise, mustard, lemon juice, salt and pepper. Stir in roasted vegetables and dill pickles and coat evenly. Serve warm, at room temperature or chilled.

Serves 4-6

Note: The vegetables will be roasting at different lengths of time. The potatoes need 50 minutes, so do them first. Prepare the beets and add them 10 minutes later and then add the green beans 25 minutes after that.
This is a Russian version of our traditional potato salad.

5 cups (1 inch) cut green beans (about 1 pound)
Cooking Spray
3 cups thinly sliced onion
6 garlic cloves, minced
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon non-dairy butter
2 tablespoons balsamic vinegar
1 teaspoon dried basil
1/2 teaspoon dried oregano
4 cups cherry tomatoes, halved
1/4 cup (1 ounce) grated  Parmesan cheese, vegan

Preheat oven to 400°F.

Cook green beans in large pot of boiling water for 3 minutes. Drain and rinse under cold water; set aside.
Heat a nonstick skillet coated with cooking spray over medium-high heat. Add onion and next 5 ingredients (onion through butter).
Saute 8 minutes or until lightly browned, stirring frequently. Stir in vinegar, basil, and oregano; cook 2 minutes. Remove from heat.
Arrange beans in an 11 x 7 inch baking dish coated with cooking spray. Top with onion mixture.
Arrange tomatoes on top of onion mixture, and sprinkle with cheese.
Bake for 35 minutes or until the cheese is lightly browned.

Note: This slightly sweet vegetable dish takes its name from the French term for mixed vegetables prepared gratin-style.

2 potatoes, peeled, cut into 1 inch cubes
1 teaspoon salt
8 ounces cavatappi or other short tubular pasta
8 ounces green beans, trimmed and halved
1/2 cup pesto
Coarse salt and fresh ground pepper

Place potatoes in a large pot of water to cover and bring to a boil.
Add 1 teaspoon salt and the pasta; return to a boil and cook for 2 minutes.
Add the green beans. Return to a boil. Cook until vegetables are tender and
the pasta is al dente, according to package instructions.
Drain; toss with the pesto and season with salt and pepper.
Serve warm or at room temperature.
